Before anyone brews, tastes, or roasts, the green coffee is measured. This is where quality becomes quantifiable.
By the time coffee leaves the farm, the cherry has been stripped away. What remains is a dried seed, milled and prepared for export as green coffee.
At this stage, it is graded.
Green coffee grading is where the subjective language of flavour meets objective, measurable standards. It is the quality gate that separates specialty coffee from commodity, and it operates on two distinct levels: physical assessment and sensory evaluation.
Understanding grading means understanding what 'specialty' actually claims, and what it does not.
Physical Grading: What Can Be Seen and Measured
Physical grading precedes tasting. Before a cupper evaluates flavour, the coffee is assessed visually and by instrument.
Defect Classification
Green coffee is inspected for physical defects. These are categorised by severity, primary defects and secondary defects, and counted against a standard sample weight, typically 300g under the Specialty Coffee Association (SCA) framework.
Primary defects (each counts as a full defect unit) include:
Full black bean, caused by over-fermentation or disease, produces fermented or sour flavours
Full sour bean, fermented internally, typically a result of processing breakdown
Dried cherry, unpulped fruit left in the lot, creates wild fermentation risk
Fungal damage, visible mould growth, a direct food safety and flavour concern
Foreign matter, stones, sticks, or other material that can damage equipment and contaminate lots
Secondary defects (multiple beans constitute one defect unit) include:
Broken or chipped beans, uneven extraction risk
Insect damage, physical burrowing from coffee berry borer
Partial black or sour beans, milder version of primary defect but still contributes off-flavours
Floaters, lower-density beans that typically indicate underdevelopment
Under SCA standards, specialty-grade green coffee must have zero primary defects and no more than five secondary defects in a 300g sample. This is a strict threshold. Commodity coffee tolerates significantly more.
The defect count is the first structural quality gate. A lot with high defects will score poorly regardless of origin pedigree.
Moisture Content
Green coffee must fall within a specific moisture range to be considered stable and safe for storage, shipping, and roasting. The SCA standard is 10–12% moisture content.
Too high (above 12–13%):
Risk of mould growth and quality degradation during transit or storage
Uneven roasting as steam escapes during the drying phase
Accelerated degradation of flavour compounds
Too low (below 10%):
Brittle beans prone to fracturing, creating uneven particle size after grinding
Loss of the organic compounds that contribute to aromatic development during roasting
Characteristic flatness or papery quality in the cup
Moisture is measured using calibrated meters at origin, at export, at import, and again before roasting. Discrepancies between measurements can indicate improper storage or container condensation issues during shipping.
Controlling moisture throughout the supply chain is non-negotiable at the specialty level.
Bean Density
Bean density, how compact the internal cellular structure is, correlates strongly with altitude (higher altitude = slower maturation = denser bean) and is a strong predictor of roasting behaviour.
Denser beans:
Require and tolerate more heat energy during roasting
Tend to roast more evenly once adequate energy is applied
Resist the rapid surface development that leads to scorching
Generally correlate with higher cup scores in well-managed lots
Density is measured using a scale and a known volume container, producing a g/L figure. Roasters use this number to calibrate charge temperature and heat application profiles, a denser green coffee from 2,000m will behave very differently in the drum than a lower-density coffee from 900m.
Screen Size
Screen size refers to bean diameter, measured by passing green coffee through a series of mesh screens with progressively smaller apertures. Screen size expectations vary by origin and contract; many buyers prefer larger, more uniform sizing, with screens 17–18 often associated with premium lots in some origins.
Screen size does not directly equal quality. A small-screened Ethiopian heirloom from 2,100m will vastly outperform a large-screened robusta from 400m. However, size uniformity within a lot matters significantly for roasting, even application of heat across consistently sized beans produces more predictable development.
Sensory Grading: The Cupping Protocol
Physical grading measures potential. Cupping, the standardised tasting process, measures expression.
The SCA cupping protocol is the industry standard. It specifies:
Coffee-to-water ratio (8.25g per 150ml)
Water temperature (93°C ± 3°C)
Grind size (medium-coarse)
Brew and evaluation timing (fragrance assessed dry and wet, flavour at 4 minutes, then as it cools)
This standardisation allows meaningful comparison between coffees evaluated in different locations, by different cuppers, at different times.
The Ten Attributes
Cuppers score ten attributes, each contributing to the final score out of 100:
Fragrance/Aroma, dry ground fragrance and wet aroma after hot water is added
Flavour, the overall impression of dominant taste characteristics
Aftertaste, length and quality of flavour lingering after swallowing
Acidity, the character and intensity of acidity (assessed for quality, not just presence)
Body, the physical weight and texture of the coffee in the mouth
Balance, how well the individual attributes integrate and complement each other
Sweetness, perceived sweetness across the cupping as the coffee cools
Uniformity, consistency of flavour across multiple cups of the same sample (five cups are typically brewed)
Clean cup, absence of off-flavours, taints, or fermentation defects
Overall, the cupper's holistic judgement, separate from individual attributes
80 is not exceptional. It is the minimum threshold for specialty classification. The number matters, but so does what lies above it.
What the Numbers Mean in Practice
A score of 80.00 is the floor of specialty classification. It means the coffee passed. It does not mean it is remarkable.
80–82: Passes specialty threshold, clean, competent, no major faults
83–85: Good specialty, clearly above the floor, showing defined character
85–87: Very good, strong origin expression, distinctive attributes
87–89: Excellent, complex, memorable, scoring in competition territory
90+: Outstanding, rare, typically representing exceptional lots with precision at every stage
Scores above 90 are genuinely uncommon. Many celebrated single-origin coffees from respected roasters sit in the 85–88 range. That is not a criticism, it is context for how high the bar actually is.
The scoring system is also not immune to variation. Different trained cuppers will score the same coffee differently by 1–3 points. This is why official scoring typically averages multiple cupper evaluations.
Who Does the Grading?
Grading is performed by trained professionals. Q Grader certification (administered by the Coffee Quality Institute, CQI) is the most widely recognised qualification, a multi-day exam process testing sensory acuity, calibration against known standards, and protocol adherence.
Grading happens at multiple points in the supply chain:
At origin, producers, exporters, and green buyers grade at farm or washing station level
At export, national coffee authorities in producing countries may have their own grading requirements (Ethiopia's Commodity Exchange, for example, grades and trades the majority of the country's coffee)
At import, importers and roasters regrade lots to verify quality claims and check for transit damage
Discrepancies between origin and import grades are not uncommon and can be a source of commercial dispute.
The Limits of Grading
Grading measures the green coffee's potential at the point of evaluation. It does not guarantee:
That the coffee was roasted with precision
That it was brewed correctly
That you personally will prefer it
That the flavour profile matches your expectations based on the origin or varietal
A coffee that grades at 86 points and is then roasted poorly will not deliver 86 points in the cup. Grading is a snapshot of potential, not a promise of outcome.
It is also worth noting that grading is conducted on freshly roasted coffee under standardised cupping conditions. Filter brewing, espresso, and other methods may present the coffee very differently, sometimes better, sometimes worse, than the cupping score implies.
Grading measures the green coffee's potential. Roasting and brewing determine whether that potential is reached.
Specialty vs Commodity: The Structural Difference
The fundamental difference between specialty and commodity coffee is not purely sensory, it is structural.
Commodity coffee is traded on volume, price, and consistency. Lots are blended together from multiple origins and farms to create a uniform bulk product. Defect tolerance is higher. Grading standards are less stringent. Traceability is limited.
Specialty coffee is traded on differentiation. Individual lots are preserved separately, graded to strict standards, and priced based on quality rather than bulk market rates. Traceability, to farm, cooperative, or washing station, is considered a minimum expectation.
When you pay a premium for specialty coffee, the grading system is part of what justifies that premium. It provides an independently verifiable quality claim, not just a marketing assertion.
